OVERVIEW

Meticulously crafted Chianti Classico from a top notch vintage and star producer. This delicious Chianti Classico is bursting with red fruits including cherries and cranberries, sandalwood and leather notes, firm, fresh and lifted. Decanting is recommended for a couple of hours and the wine would benefit from a couple of years maturation in bottle too.

Fragrant and refined, this opens with aromas of blue flower, sandalwood, new leather and camphor. Savory and elegantly structured, the full-bodied palate exhibits dried cherry, licorice, crushed mint and orange zest alongside taut, fine-grained tannins. FOOD PAIRING INSPIRATION

This top notch Chianti Classico will pair super well with tomato based dishes including pasta dishes and pizza dishes as well as Parmesan chicken, sausages and lamb chops.

VINTAGE AND WINEMAKING

Hand sorted and picked, the wines from Fontodi are labour intensive but the attention to detail shows. Fermentation takes place in temperature-controlled stainless-steel tanks with indigenous yeasts and lasted for about two weeks. Once the wine has undergone fermentation, it is racked into 225-litre French oak barriques, a mixture of Tronçais and Allier, where it underwent malolactic fermentation and remained for 18 months, it then spent an additional six months in older barriques before bottling. The wine is matured in bottle at Fontodi for 6 more months before release.

The 2020 vintage saw a early budbreak due to a warm, early spring. The cool and rainy early summer that followed slowed down the vine’s growing cycle, which then hit further delays due to heat stress in August but overall the growing season was very good.

PRODUCER NOTES

Fontodi is a cult producer of Chianti with their flagship wine, the Flaccianello della Pieve, one of the most sought after wines in the world. The Vigna del Sorbo, the 'second' wine of Fontodi is also one of the very finest wines of Chianti and their entry Chianti Classico, this bottling, often tops 94-95 points with the local critics. 

Fontodi is a certified organic estate which extends over 130 hectars of which about 70 are planted with vines. The wines are vegetarian but not currently vegan. The type of agriculture practised is inspired by the principles of respect of nature and sustainability. Not only are no chemical products used but there is an effort to maximize the internal resources of the estate, thereby reducing the need for any external input. Respecting the environment means wines that are better, purer, and a truer expression of the grape and the territory. Fontodi also operate holiday lets within the estate for the Sangiovese lover.

This wine should be decanted for at least 2 hours if opened young. The wine will improve over the following decade and should be cellared at 12°C.
