Rooibos tea and very, very delicate spices, as if they’d been brushed onto the fruit with a feather. Ground ginger, white pepper. A heart-breakingly beautiful wine. Soars. The grapes were harvested in early October with good yields. The grapes added to this cuvee include Grenache Noir, Carignan, Grenache Gris and Grenache Blanc. All the grapes are hand picked with rigorous inspection in the vineyard and sorting table. Whole bunches are crushed under foot in demi-muids and plunged by hand 2-3 times a day during fermentation.
